Iced Molasses Cookies

ingredients

  • 3 1/4 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp allspice
  • 1 cup brown sugar
  • 1 cup salted butter, softened
  • 3/4 cup unsulfured molasses
  • 1 large egg
  • Icing:
  • 1 cup powdered sugar
  • 2 tbl milk

    Preheat oven to 300.

    In medium bowl combine flour, soda, salt, cinnamon, ginger and allspice. Mix well with a wire whisk and set aside.

    In large bowl beat sugar and butter with electric mixer on medium speed until grainy paste forms. Scrape sides of bowl, then add molasses and egg. Beat until light and fluffy.

    Add flour mixture and blend at low speed until just combined. Do not overmix.

    Divide dough in half and shape each hald into a roll 1 1/2 inches in diameter. Wrap rolls in wax paper and refrigerate until firm, about 2 hours.

    Slice cookies 1/2-inch thick and place on ungreased cookie sheets, 1 1/2 inches apart. Bake for 22-25 minutes until cookies are set, but still soft. Immediately transfer to wire cooling rack. Cool completely.

    Blend sugar and milk in a small bowl until smooth. Using a small spoon, top each cookie with icing.
