Light Chicken Vegetable Salad
ingredients
- 3 chicken breasts (boiled and shredded)
- 1/3 c. chopped zucchini
- 1/3 c. chopped carrot
- 2 TSP chopped onion
- 2 TSP chopped fresh parsley
- 1/3 c. fat free mayonnaise
- 1/4 c. fat free sour cream
- 1/4 tsp salt
- 1/4 tsp pepper
- 3 tomatoes, diced
- 1/4 c. slivered and toasted almonds

Combine chicken, zucchini, carrot, onion and parsley in a large bowl.

Combine mayo, sour cream, salt and pepper in a small bowl. Add to chicken mixture; mix well. Refrigerate at least 2 hours.
