Light Chicken Vegetable Salad

ingredients

  • 3 chicken breasts (boiled and shredded)
  • 1/3 c. chopped zucchini
  • 1/3 c. chopped carrot
  • 2 TSP chopped onion
  • 2 TSP chopped fresh parsley
  • 1/3 c. fat free mayonnaise
  • 1/4 c. fat free sour cream
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 3 tomatoes, diced
  • 1/4 c. slivered and toasted almonds

    Combine chicken, zucchini, carrot, onion and parsley in a large bowl.

  • 2

    Combine mayo, sour cream, salt and pepper in a small bowl. Add to chicken mixture; mix well. Refrigerate at least 2 hours.
