Carrot-Raisin Bran Muffins
ingredients
- 1 1/4 c. oat bran cereal
- 3/4 tsp. whole-wheat flour
- 3/4 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 2/3 c. skim milk
- 2 large eggs
- 1/2 c. packed light-brown sugar
- 1/3 c. oil
- 3/4 c. finely grated carrots (about 2 medium sized carrots)

1. Heat oven to 375F. Coat muffin pan with Pam.

2. In a large bowl, whisk together bran cereal, both flours, baking powder and soda, salt and cinnamon.

3. In a small bowl, whisk together the milk, eggs, sugar and oil. Stir in carrots and raisins. Pour into dry mixture and fold together until all ingredients are moistened.

4. Spoon into muffin pans (1/3 c. in each). Let rest for 5 minutes at room temperature.

5. Bake muffins at 375F for 16 to 18 minutes. Cool on a wire rack.
