Cranberry Ginger Chutney

ingredients

  • 1 and 1/2 cups sugar
  • 3/4 cup apple cider or juice
  • 1/4 cup apple cider vinegar
  • 12 oz bag cranberries (3 cups)
  • 1 cubed Bosc pear
  • 1/4 cup finely grated ginger
  • 1/4 teaspoon dried crushed red pepper

    1. Stir sugar, apple cider, and apple cider vinegar together in a saucepan over medium high heat until sugar dissolves.

    2. Add cranberries, pear, ginger, and crushed red pepper.

    3. Bring to boil, reduce heat and simmer until chutney thickens, stirring occasionally (about 20 minutes).

    4. Serve warm or cold. It goes well with poultry, but I’m a vegetarian and eat it with Indian dishes or just by itself. It is spicy, so if you don’t like it so hot, redue the crushed red pepper.
