Delicious White Bean Dip with Rosemary and Garlic Oil

JenniferJennifer

ingredients

Ingredients:
  • 1 (19 ounce) can white beans
  • 3 cloves garlic, halved lengthwise
  • 1 sprig rosemary
  • 1 small pinch fresh thyme leaves
  • olive oil
  • salt and pepper

directions

Directions:

  • 1

Separate the rosemary leaves from the sprig and put in a small pot with the garlic and thyme. Pour in enough olive oil to cover the leaves and coat the garlic.

  • 2

Put the pot on the stove and turn the heat to low.

  • 3

Turn off the heat as soon as you hear crackling. Put the pot aside and let it cool. The oil continues to draw flavor from the herbs and garlic as long as you leave it.

  • 4

Rinse the beans well and drain. Shake them in a colander to remove as much moisture as possible.

  • 5

Put the beans in a blender/food processor and pour the cooled oil in too.

  • 6

Add salt and pepper to taste and blend into a puree

  • 7

Taste it. Add more salt and pepper if necessary. When you’ve got it how you want it, scoop it into a bowl. Wait as long as you can to eat it and enjoy!
