Southwestern Sausage and Cheese Egg Casserole
ingredients
- 4 4 oz cans chopped green chilies
- 6 corn tortillas, chopped in to 1/2 inch strips
- 1 lb bulk hot italian sausage, cooked and drained
- 2 c shredded monterey jack cheese
- 1/2 c milk
- 8 eggs
- 1/2 tsp salt
- 1/2 tsp garlic salt
- 1/2 tsp onion salt
- 1/2 tsp cumin
- 1/2 tsp ground pepper
- 2 large ripe tomatoes sliced
- paprika
- sour cream (optional)
- prepared salsa (optional)

Butter baking dish. Layer half of chilies, half of tortilla strips, half of sausage and half of cheese. Repeat. Mix next 7 ingredients next and pour into casserole. Arrange tomato slices on top. Sprinkle with paprika.

Bake at 350 for 45-55 minutes.
