Emily's Greek Orzo Salad
This is the salad Sarah and I made the first time I met Dave. He brought Buttercup cupcakes to the dinner and I’ve liked him every since!
ingredients
- 2 Tablespoon olive oil
- 12 ounces Orzo
- 1 1/2 cup seasoned feta
- 1 cup yellow pepper
- 1 cup red pepper
- 3/4 cup Kalamata olives
- 4 green onions
- 2 Tablespoons capers
- 3 Tablespoons pinenuts (toasted)
- Dressing:
- 1/2 cup olive oil
- 3 Tbsp lemon juice
- 1 Tbsp white wine vinegar
- 1 Tbsp minced garlic
- 1 1/2 tsp oregano
- 1 tsp dijon mustard
- 1 tsp cumin

Boil orzo, add 2 Tbsp olive oil.

Chop peppers, olives, onions.

Add feta, peppers, olives, onions, capers, and pine nuts to orzo.

Mix together all the ingredients in dressing and add to above.
