Asian Healthy Pineapple Chicken

ingredients

  • 1/4 cup Splenda brown sugar
  • 2 tbsp cornstarch
  • 1/4 cup vinegar
  • 1 tbsp lite soy sauce
  • 1 can pineapple chunks, drained
  • Green pepper, red pepper and onion cut in strips
  • 2 boneless chicken breasts sliced (or add more veggies if you are still not eating meat =)

    Combine brown sugar and cornstarch in a bowl. Stir in vinegar and soy sauce. Add pineapple and veggies to the bowl and set aside.

    Stir-fry chicken in wok until cooked through. Add pineapple mixture to wok and mix well. Cover and simmer on low for 10 minutes.

    Serve immediately over rice or rice noodles.
