Asian Healthy Pineapple Chicken
ingredients
- 1/4 cup Splenda brown sugar
- 2 tbsp cornstarch
- 1/4 cup vinegar
- 1 tbsp lite soy sauce
- 1 can pineapple chunks, drained
- Green pepper, red pepper and onion cut in strips
- 2 boneless chicken breasts sliced (or add more veggies if you are still not eating meat =)

Combine brown sugar and cornstarch in a bowl. Stir in vinegar and soy sauce. Add pineapple and veggies to the bowl and set aside.

Stir-fry chicken in wok until cooked through. Add pineapple mixture to wok and mix well. Cover and simmer on low for 10 minutes.

Serve immediately over rice or rice noodles.
