Tzatziki
A cool and refreshing blend of cucumber and yogurt, this Greek tradition is an Easter favorite.
ingredients
- 1 Cup Plain Low-Fat Yogurt
- 1/2 Cup Low-Fat Sour Cream
- 2 Garlic Cloves
- 2 Tsp Extra Virgin Olive Oil
- 1 Tsp White Wine Vinegar
- 1 Tsp Dried Dill
- 1 Lemon, juiced
- 1/2 Cucumber
- Salt & Pepper to taste

1. In a bowl, combine the yogurt, sour cream, olive oil, vinegar, dill and lemon juice.

2. Using a hand grater, grate the cucumber into the yogurt mixture, ensuring all the liquids and cucumber pieces are incorporated.

3. Using a garlic press, add the garlic to the mixture.

4. Season with salt and pepper and refrigerate for at least one (1) hour.

Our family loves this over grilled lamb at Easter time. For a delicious appetizer, serve with toasted pita wedges.
