“Berries & Zabaione is popular in the summer when the freshness and flavor of berries are at their peak,” says Paolo Lafata, Olive Garden senior executive chef. “This dessert is often found in pasticcerias and trattorias in Italy, which customarily feature the sweets of their region or village.”

ingredients

  • 8 extra large egg yolks
  • 1/4 cup sugar
  • 1/4 cup Amaretto or Frangelico liqueur (for the home version)
  • 1 cup whipping cream
  • 4 scoops raspberry sorbet or sherbet (or favorite flavor)
  • 2 cups fresh strawberries cut in half lengthwise
  • 1 cup fresh blueberries
  • Instant-read thermometer
  • 4 red wine glasses

directions

    Whip egg yolks in the top of a double boiler (upper pan should not touch hot water).

    Stir in sugar and liqueur until smooth, at about 165 degrees F.

    Cool until mixture is below 40 degrees F. Fold in whipping cream and mix well. Set completed Zabaione aside.

    Place one scoop of raspberry sorbet or sherbet inside each wine glass.

  • 5

    Add 1/2 cup of fresh strawberries and 1/4 cup of fresh blueberries to each wine glass, top with Zabaione.
