ingredients

  • 1 package pie crust mix
  • 4 slices bacon, crisply fried & crumbled
  • 1 small onion, thinly sliced
  • 1/4 cup shredded swiss cheese
  • 1 egg, slightly beaten
  • 1/2 cup light cream or milk, heated
  • 2 tablespoons parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon nutmeg

    Prepare pastry according to package instructions. Roll out 1/8 inch thick on lightly floured board. Cut into rounds with 3 inch cookie cutter. Fit rounds into bottoms and sides of 2 1/2 inch muffin cups. Prick lightly with tines of fork. Bake 5 minutes or until lightly browned (450 degrees).

    Drain cooked bacon on paper toweling. Cook onion in small amount of bacon drippings until soft. In each baked pastry cup equally divide bacon, onion and swiss cheese. In a small bowl stir small amount heated cream into egg. Add remainder of cream, parmesan cheese, nutmeg, salt and pepper. Blend well. Pour over onion and cheese mixture in the pastry cups. Bake 15 minutes, then reduce oven to 350 and bake 5-7 minutes longer, or until knife inserted into mixture comes out clean. Serve hot. May be reheated in 350 oven about 5 minutes if frozen.
