ingredients

  • 1 pound lean ground beef*
  • 1 bunch of green onions-chopped
  • 1 loaf tillamook cheddar cheese-grated
  • 2 small cans of chopped olives
  • 2 large can of Las Palmas enchilada sauce
  • 2 tsp of chili powder (or to taste)
  • garlic
  • salt and pepper
  • 2-3 dozen corn tortillas

directions

Brown beef with chili powder, garlic, salt and pepper. Put in large bowl to cool. Add 1/2 cheese, onions, and olives to beef mixture and mix. Heat sauce and thicken with flour. Heat tortillas in sauce, add beef mixture and roll into enchiladas. Cover enchiladas with remaining cheese. Pour some of remaining sauce over enchiladas. Cover with aluminum foil. Bake 350 degrees for at least 30 minutes.

*can substitue with shredded chicken or just cheese
