Henry's Tortellini Salad

ingredients

  • 4 cups uncooked Tortellini
  • 2 cups broccoli florets
  • 1 cup olive oil
  • lemon juice
  • 4 Tbls. each of dried parsley, thyme, marjoram & oregano
  • 6 cloves garlic, chopped fine or crushed
  • 1/2 cup Parmesan cheese
  • salt & pepper

directions

  • 1

    1) combine oil, lemon juice, herbs, salt & pepper. Let stand 2 hours

  • 2

    2) blanch broccoli 1 minute in salted water; plunge into ice water to stop cooking process.

  • 3

    3) Cook the tortellini in salted water (follow package directions)

  • 4

    4) Combine all ingredients and toss well.
