Vegetable Salad Almondine
ingredients
- 2 cups fresh spinach, broken in pieces
- 1/2 head iceberg lettuce, broken in pieces
- 1/4 cup toasted sliced almonds
- 2 cups raw (with skin) thin sliced zucchini (1 medium)
- 1 cup frozen small peas
- 5 green onions, sliced thin
- 1 cup swiss cheese, grated
- 4 slices (or more) cooked bacon, crumbled
- 5 large mushrooms, sliced
- 2 hard boiled eggs
directions
Layer & chill for 12 hours. Cover and place overnight in refrigerator. Morning of, pour 2 cups of ranch dressing over top.
