Wild Mushroom Sauce with Sausage

ingredients

  • 3/4 lbs sausage - recipe want wild boar I used Sicilian (out of casings)
  • 2/3 oz porcini dried
  • 2/3 oz other wild mushrooms (I used shitake)
  • 1 onion medium diced
  • 2 garlic cloves minced
  • 4 tbsp parsley chopped
  • 1/3 tsp oregano, dried, minced
  • 1/3 tsp ropsmary fresh
  • 1/3 tsp thyme
  • 3 1/2 oz tomato paste
  • 1 2/3 tbsp sherry
  • 2/3 C red wine
  • 2/4 of one 15oz chopped tomatoes

Soak the porcini in warm water for 15 minutes. Reserve liquid, Chop mushrooms finely.

In a saucepan saute the onion, parsley, herbs, sausage, porcini and other wild mushrooms and garlic. Mix the paste with the wine and add along with the tomatoes. Add the mushroom soaking liquid and sherry. Simmer until thick. Add salt and pepper and water to tatse. Simmer for 15 mnutes ore and adjust seasoning.

Serve over any pasta or rice or bread.
