Nonnie's Fresh Salsa
ingredients
- 2 15 ounce cans black beans, rinsed and drained
- 1 16 ounce can white shoe peg corn, drained
- 6 tablespoons fresh lime juice
- 6 tablespoons olive oil
- 1 1/2 teaspoons ground cumin
- 1/2 cup red onion, chopped fine
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon salt
- 1 cup peeled and chopped tomatoes
- chopped jalapeno pepper (optional), she did not use
directions
Combine everything except tomatoes. Refrigerate overnight, covered. Add the tomatoes just before serving. You may want to add a little more lime juice if it seems dry. Serve with blue or white corn chips.
