CYN'S CRANBERRY CHERRY CHUTNEY
Sue Dorfman, Bonnie Krielsheimer, Isabella Casser and other friends have supplied their relish recipes over the years...but this creation is my favorite, and I have claimed the recipe as mine!
ingredients
- 1 cup sugar, minus 2 Tbsp.
- 1 cup water
- 1/2 cup port wine
- 1/4 tsp. allspice
- 1/2 cup dried cherries
- 1 12 oz. package fresh cranberries
- 2/3 cup chopped walnuts, toasted
- 1/2 tsp. orange zest
- 1/4 tsp. almond extract
- 1 large can Mandarin oranges, drained
directions
Wash cranberries and pick out any crushed or rotted berries. Combine first four ingredients in a saucepan over high heat and bring to a boil. Add cherries and cook 1 minute. Add cranberries, reduce heat and simmer 10 minutes (berries will pop and burst). Remove from heat and stir in toasted walnuts and orange zest. After the mixture has cooled for about an hour, add in drained Mandarin oranges, cover and refrigerate. Keeps for two weeks.
