Slow-Cooked Pork Tacos
ingredients
- 1 boneless port sirloin roast, cut into 1 in pieces
- 1 1/2 cups salsa verde
- 1 med red pepper, chopped
- 1 med onion, chopped
- 1/4 cup chopped dried apricots
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp pepper
- 10 flour tortillas
- taco toppings

In 3 qt crock pot, combine first 11 ingredients. Cover and cook on high 4-5 hrs or until meat is very tender.

Shred pork with two forks. Serve with tortillas and taco toppings.
