Nut-Rice Pudding
ingredients
- 2 c. water
- 1/2 tsp salt
- 1/4 c. rice
- 1 quart milk
- 1 tbsp butter
- 3 tbsp sugar
- 3 tbsp chopped almonds
- 2 tbsp grated fresh coconut
- 1/3 c. raisins
- 2 tbsp chipped pistachio nuts
directions

1. mix water and salt together and cook with washed rice, stirring until water has evaporated and rice is dry.

2. Add milk and continue cooking gently.

3. Add butter and sugar when rice has cooked 10 minutes, then allow to become soft.

4. Add the almonds, coconut, raisins, pistachio nuts for garnishing.

5. Allow rice to continue simmering for a few minutes longer to allow raisins to plump.

Serve hot in a large bowl, sprinkle with pistachio and serve as pudding.
