Grilled Three Pepper Salad
ingredients
- 2 lg green bell pepper, cut in 1" pieces
- 2 lg yellow bell pepper, cut in 1" pieces
- 2 lg red bell peppers, cut in 1" pieces
- 1 lg red onion, halved and thinly sliced
- 1 lb mozzarella cheese, cut in bite size cubes
- 2/3 C olive oil
- 1/3 C red wine vinegar
- 2 T lemon juice
- 2 T Dijon mustard
- 1 T minced fresh basil
- 1/2 t cayenne pepper
- 1/2 t garlic powder
directions

Thread peppers onto metal skewers;grill over medium heat for 10-12 minutes or until edges are browned. Remove from skewers and place in large bowl. Add onion, mozzarella and olives, toss gently. Cover and refrigerate.

combine vinaigrette ingredients and shake well. Pour over pepper mixture just before serving. Toss to coat.
