Twice Baked Potatoes
ingredients
- 4 large potatoes
- 1/lb bacon
- 4 tbsp butter
- 1.2 onion, chopped
- 1/2 tsp red crushed red pepper
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp chopped chives
- 1 tsp salt
- 1 8 oz. container sour cream
- 1 8 oz. package shredded cheese
- 1 tsp bread crumbs
directions
Preheat oven to 400. Pierce potatoes w/ fork. Bake about 1 hour or until soft. In skillet melt butter & cook onions, red pepper, garlic powder, chives, salt and pepper. Cook onions until soft. Slice open potatoes and scoop out insides into bowl; mix in onions, sour cream, and 1/2 the cheese. Refill the potato skins w/ mixture and top w/ bread crumbs, cheese & bacon. Cook about 15 minutes or until cheese is melted.
