Quick Sausage and Shrimp Paella
ingredients
- 1 lb. Shrimp, cooked and peeled
- 1 lb.sausage, cut into 1/2-inch slices
- 1 medium onion, peel and thinly slice onion into rings
- 1 small red bell pepper, seeded and sliced into 1/4-inch strips
- 2 tbsp. olive oil
- 2 medium dried hot red chilies (or, for less spicy, 1/2 tsp. dried red chile flakes)
- 1/4 tsp. dried thyme
- 1 bay leaf
- 1 1/2 cups long-grain white rice (10oz.)
- 1/2 cup dry white wine
- 1 3/4 cups chicken stock or chicken bouillon
- 1 cup canned plum tomatoes
- 1/4 tsp. saffron
- 3/4 cup frozen peas
directions
Heat oil in a 5 quart pot over medium-high heat. Sauté sausage until just browned,about 2 minutes. Add onions, chili, thyme, bay leaf and cook over a low heat for about 5 minutes. Add bell pepper and rice and stir to coat with oil. Add wine, saffron, chicken stock, and tomatoes. Bring to a boil. Reduce immediately, cover and simmer until rice is tender, about 18 to 22 minutes. Remove from heat. Stir in peas and shrimp. Cover and let sit 2 minutes. Serve immediately.
