CHICKEN GUMBO--SLOW COOKER STYLE
ingredients
- 1 lb. boneless skinless chicken breasts, cut into cubes
- 1 (10 oz) package frozen okra, sliced and thawed
- 2 links andouille sausage, diced (We use turkey sausage.)
- 1 cup chopped onions
- 2 celery stalks, chopped
- 1 green bell pepper, seeded and chopped
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 1/2 tsp. salt
- 2 bay leaves
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1/2 tsp. mustard powder
- 1/4 tsp. cayenne pepper
- 1/4 tsp. ground black pepper
- 2 cups reduced-sodium chicken broth
- 2 cups reduced-sodium tomato juice
- 2 cups cooked rice

1. In a slow cooker, combine the chicken and all remaining ingredients, except the rice.

2. Mix well to combine and cover.

3. Cook on LOW for 6-8 hours, or on HIGH for 3-4 hours.
