Chicken Cutlets
I first tried this dish at Janice’s bridal shower. Evelyn and Marilyn Kroetsch (Ed’s mother and sister) made this and it was served along with a Kaiser bun. MMMM delicious. Great cooks both of them and Ed is pretty darn good himself. Lots of wonderful memories surrounding food, eh?
ingredients
- boneless chicken breasts
- fine bread crumbs
- salt and pepper
- chopped parsley
- piece of romano cheese grated - large handful
- garlic powder - 2 sprinkles
- 2 eggs & 2 or 3 TBSP water
directions

Flatten chicken breasts with mallet in between wax paper or saran wrap.

Dip chicken into crumbs, into egg mixture and then into crumbs again.

Saute lightly in oil, drain on paper.

Can be kept warm in oven or reheated (if frozen) in oven.

For a variation, I add other fresh herbs such as thyme, sage fresh from the garden. This can be also be served hot with a sauce such as an Italian tomato sauce.
