Buckeyes (Peanut butter balls)Amy
- 1/2 pound (2 sticks) butter, softened
- 1 pound box of powdered sugar
- 1/2 tsp vanilla
- 1 pound jar of creamy peanut butter
- 1 bag chocolate chips
- 2 Tbsp shortening
Beat butter and peanut butter together until creamy. Beat in the powdered sugar and vanilla. Refrigerate about 30 minutes.
Shape into 1 inch balls; place on wax paper lined cookie sheet.
Refrigerate several hours or freeze for 1 hour.
Melt chocolate chips with shortening, uncovered in microwave-safe bowl for 1 minute. Stir to finish melting chips. If necessary, microwave the chocolate another 10 seconds, stirring until melted.
Put a toothpick into each peanut butter ball. Dip into chocolate leaving a small circle on top uncovered. Return to cookie sheets; refrigerate until chocolate is set.
Refrigerate or freeze covered.
