Mexican Black Beans 'N' Rice
ingredients
- 2 teaspoons olive oil
- 1 cup onion, chopped
- 1/2 cup green pepper, chopped
- 2 cups cooked long grain rice
- 1/2 teaspoons ground cumin
- 1/4 teaspoon cayenne pepper
- 1/8 teaspoon dried coriander
- 1 15-ounce can black beans, drained and rinsed
- 2/4 cup tomato, chopped
directions
Heat olive oil in a large non-stick skillet over medium-high heat until hot. Add onion and green pepper and saute until tender. Stir in cooked rice and next 3 ingredients; saute 3 minutes more. Add beans and chopped tomato, saute 3 minutes or until heated through.
