Julie Tabouli Salad
ingredients
- 1/2 c. Bulgur wheat
- 1/2 c. boiling water
- 1/4 c. lemon juice
- 1/3 c. olive oil
- 1/2 tsp minced garlic
- 1/2 tsp dried oregano
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1 c. sliced carrots
- 2 c. cabbage, chopped
- 2 tsp scallions, minced
- 1/2 c. parsley, chopped
- Chick peas

1. Pour boiling water over bulgur wheat and let stand 10 minutes.

2. Shake together lemon juice and olive oil. Pour mixture plus garlic, oregano, salt, and pepper over bulgur wheat.

3. Add carrots, cabbage, scallions, parsley. Add chick peas.

5. Toss gently, cover bowl and chill.
