The combo of sorghum and millet flour gives this soda bread a lovely mildly sweet flavor. The potato starch gives it tenderness, moisture and lift. If you don’t like caraway, try grated orange peel.
1 cup millet flour
½ cup sweet sorghum flour
½ cup potato starch
2 tablespoons raw sugar
1 teaspoon baking soda
1½ teaspoons baking powder
1 teaspoon sea salt
2 teaspoons xanthan gum
5 tablespoons butter or Organic Spectrum Shortening
¾ cup buttermilk or plain non-dairy hemp milk with ½ teaspoon lemon juice added
2 eggs (or Ener-G Egg Replacer, mixed)
2 tablespoons honey, or raw agave nectar
1 to 3 teaspoons caraway seeds, to taste (or use grated orange peel)
1 cup currants or raisins
I made this vegan- and it was delicious. But if you prefer butter, buttermilk and eggs, that will work as well. Freeze leftover slices for freshness.
