Lindsey's Split Pea Soup

A delicious vegetarian version of a winter classic. Healthy and heartwarming! Serve over brown rice.

ingredients

  • 2 cups green or yellow split peas, rinsed
  • 2 T olive oil
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 1 large onion, chopped
  • 5 garlic cloves, minced
  • 2 T curry powder
  • 1 1*3 strip Kombi
  • 7 cups water
  • 1 T tamari
  • 1/4 t cayenne pepper (or more to taste!)
  • Salt and Pepper

    Rinse split peas thouroughly.

  • 2

    Heat olive oil in a large soup pot and add onions, carrots, celery and garlic. Stir to coat and cook until slightly soft, 2 minutes. Add curry powder.

    Add split peas, water, kombi. Bring to boil. Reduce heat. Simmer 1-1.5 hours until peas are soft.

    Add tamari, cayenne and black pepper.

    Serve over brown rice.
