Roasted Potato Salad with Mustard Dressing
This tangy side dish tastes great with burgers or steaks.
ingredients
- 3 lbs. small red potatoes, cut into 1" pieces (or use a mixture of fingerling, red and purple potatoes)
- 1 T. olive oil
- 2 t. freshly ground black pepper
- 1/2 t. kosher salt
- 2 bacon slices (uncooked), chopped
- 2 cups diced sweet onions (such as Vidalia)
- 2 cloves garlic, minced
- 3 T. Dijon mustard
- 2 T. mayonnaise (reduced-fat works too)
- 1 1/2 T. honey
- 1 1/2 T. sherry vinegar
- 1/4 cup chopped fresh parsley
