Raskita
This is Grandma Rae’s recipe for raskita’s.
ingredients
Filling- 4 cups water
- 4 cups sugar
- 1 grated orange
- juice of 1 lemon
- 1 pounds grated walnuts
- 1 cup break crumbs (MIXED!)
- 5 eggs
- 1 egg to use later (6 eggs total)
- 10 Tablespoons (Heaping) sugar
- 10 Tablespoons oil
- 1 Tablespoon vanilla
- 1/2 grated orange
- 1/2 grated lemon
- 3 teaspoon baking powder
- 5 cups flour (in 3c, 1c, 1c increments)

Filling
Boil water and sugar until thick. Add orange and lemon juice. Boil again until thick. (approx 20 minutes). Add walnuts and breadcrumbs. Cool in fridge overnight.
Dough

Beat 5 eggs and sugar together. add oil, vanilla, orange, lemon. Sift together baking powder salt and 3c of flour. Add to the egg mixture. mix together. Add 1 cup flour. Knead dough and add 1 cup flour until dough rolls easily without sticking.

Roll dough until it is long and flat. place filling in the middle of dough. fold over over so it makes a rope. Connect both ends of the rope to make a donut looking shape.

Place riskitas on each cookie sheet. Beat 1 egg in a bowl and brush top of riskitas with egg before putting in the oven.

Bake at 375 for 25 minutes.
