SALMON CAKES
Terre’s quick and easy recipe!
ingredients
- 15-ounce can salmon, drained
- 2 slices whole wheat bread (broken)
- 1 egg
- 1 small onion, chopped
- 1 tsp. dijon mustard
- 1 tsp. lemon juice
- Italian bread crumbs
- 1-2 Tbsp. olive oil
directions
Mix first six ingredients until the bread is “gone”. Shape into patties, coat with Italian bread crumbs and place in hot oil. Fry until golden brown on both sides.
notes
Good with sweet potatoes or salad.
