Taziki's Friday Special
ingredients
- 3 tablespoons fresh thyme, chopped
- 1 tablespoon minced shallot
- 1/2 cup of balsamic vinegar
- 1 teaspoon of sugar
- 1 tablespoon of dijon mustard
- 1 1/2 cup of olive oil
- salt and pepper to taste
- 6 cups of mixed lettuce (I use romaine)
- 4-6 boneless chicken breasts, grilled and cubed
- 1 1/2 pounds of penne pasta, cooked
- 1 package of feta cheese, crumbled
- 3 tomatoes, seeded and diced
- 1 handfull fresh basil, chopped
directions
For the vinaigrette: mix thyme, shallots, balsamic vinegar, sugar, and mustard. Slowly whisk in oil. Add salt and pepper. Toss with cooked pasta, chicken, and vinaigrette. Place on top of bed of lettuce and sprinkle with fresh basil and feta cheese. This dish is best served warm or room temperature.
notes
Can add another half a cup or so of balsamic.
