Tortellini Spinach Salad
Flavorful summer meal which is easy to prepare and tasty enough to share with friends.
ingredients
- 1 lb. tortellini
- 1/4 cup pesto
- 5 tbs olive oil (divided)
- 1 tbs lemon juice
- 1 1/2 tbs red wine vinegar
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 lb. Field Salad
- 1 c. thinly sliced red onion rings
- 1/4 c pine nuts
- 1/2 c crumbled blue cheese
directions

1. Cook tortellini according to package directions. Drain and cool with cold running water.

2. In a medium bowl, combine pesto, 3 tbs olive oil and lemon juice. Beast with a fork to blend. Add the tortellini and toss to coat.

3. In a large bowl, combine 2 tbs olive oil, red wine vinegar, salt and pepper. Beat to blend. Add field salad and toss to coat. Top with tortellini and remaining ingredients.
