Megan's Italian Bean Soup
I’m never home. And I rarely cook. So when I am forced to do so, I have three meals in mind-1) Velveeta Mac n’ cheese 2) Tortellini in Brodo 3) Italian Bean Soup. All three are versions of Italian meals (ok, ok, maybe the Velveeta is pushing it) but the Bean Soup involves Bacon, so hands down we have a winner. It’s easy, quick, and almost impossible to screw up. It was the last meal I ate while in Italy, and I’ve been recreating it ever since. I serve it to brave friends and family members and the real kicker is that is pairs beautifully with bubbles. Even the cheap ones.
ingredients
- 1 chopped Onion
- 2 chopped garlic cloves
- 2 cans Northern Beans
- 1 can Chicken Broth
- Lots and lots of Bacon
- Few slices toasted bread, if desired.
- Sage/Basil/Italian Seasons/any herb.
