Lemon Rice with Pine Nuts
ingredients
- 3 C chicken broth -- boiled
- 1 1/2 C rice
- 3 tbsp butter
- 1 small onion -- minced
- 1/4 C pine nut -- toasted
- 1/4 C lemon juice
- 1 tbsp dill
directions
Heat chicken broth to boil and add rice. Simmer 15-18 minutes
Cook onions in butter till translucent, 5 minutes medium heat.
Add onions, pine nuts and lemon juice to cooked rice. Season with salt and pepper to taste.
