Double Chocolate Bran Muffins
ingredients
- 3 cups wheat bran (divided)
- 1 cup boiling water
- 2 cups buttermilk
- 2 eggs
- 1 1/2 cup sugar
- 1 cup canned pumpkin (1/2 of a 16-ox can; freeze the other)
- 2 1/2 cups flour
- 1/2 cup cocoa powder
- 2 1/2 tsp baking soda
- 1 tsp salt
- 1 cup semi-sweet chocolate chips
- dried fruit and/or berries, nuts, ground flax seed optional

Preheat oven to 350. Measure 1 cup bran and 1 cup boiling water into a large bowl. Let stand for 5 minutes. Add buttermilk, eggs, sugar, and pumpkin. Whisk until smooth.

In a medium bowl, combine flour, remaining 2 cups bran, cocoa, baking soda, and salt. Mix until combined.

Add dry ingredients to wet ingredients gradually while mixing gently with large spoon or rubber spatula. Add chocolate chips and any other stir-ins of your choice.

Spray muffin tins with non-stick cooking spray. Fill tins half full with batter. Bake for 20 minutes.
