Blueberry and Banana Muffins
These muffins are extra healthy and kids will love them! Freeze an extra batch for a quick and easy snack to include in the kid’s lunch box or for your purse when you’re on the go!
ingredients
- 2 medium ripe bananas, mashed
- 1/4 cup vegetable oil
- 1 large egg
- 1 tsp pure vanilla extract
- 1/4 cup plain yogurt
- 3/4 cup all purpose flour
- 1/4 cup whole wheat flour
- 1/2 cup ground flax seeds
- 1/2 cup bran
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/8 tsp salt
- 1 cup frozen or fresh blueberries

Preheat Oven to 375 degrees Ferenheit.

Spray 12 muffin cups (or 6 large if yu have them and want giant muffins!) with vegetable spray

In a large bowl, beat together the bananas, oil, egg, vanilla and yogurt until well mixed.

Combine both flours, flax seeds, bran, sugar, baking powder, baking soda, cinnamon and salt and add to liquid ingredients until just mixed.

Fold in blueberries.

Pour the batter into the muffin cups and bake 12-15 min. or until tops are firm to the touch and a toothpick inserted comes out clean.
