Briana's Mediterranean Pasta
An easy, tasty, heart healthy meal featuring summer vegetables available from you local farmer’s market.
ingredients
- 1 T extra virgin olive oil
- 4 cloves garlic, minced
- 1/2 small red onion
- 2 boneless, skinless chicken breasts
- 1 large zucchini, cubed
- 2 yellow squash, cubed
- 1/2 tsp dried oregano
- 1/4 C black and/or green olives, chopped
- 1/4 C sun-dried tomatoes, chopped
- 1 C fresh baby spinach
- 1/4 C feta cheese
- 1/2 C cherry tomatoes, halved
- 1 C uncooked gemelli or rotini pasta
- 1 T chopped flat leaf parsley
- salt & pepper to taste

In a large skillet, heat olive oil over medium heat. Add onions, garlic, oregano and chicken. Cook until chicken is just browned.

In a separate pot, cook pasta according to package directions. Drain and set aside.

When chicken is browned, add zucchini, squash, olives, and sun-dried tomatoes. Cook, stirring occasionally until chicken is cooked through.

Combine pasta and toss with fresh spinach, feta cheese, keeping over heat until spinach is wilted and cheese is soft. Add salt and pepper to taste.

Serve topped with cherry tomatoes and fresh parsley.
