Darby O'Gill's Little People Stew

November 30, 2008: Kyle Bunch says, “Did some experimenting in the kitchen (Brooklyn, NY) earlier this month, and figured I’d document it for posterity’s sake. This is my Irish Stew Recipe, aka Darby O’Gill’s Little People Stew (named for my favorite non-Bond Sean Connery movie), not because I put little people in the stew”.

ingredients

  • Note: Ingredient amounts are approximate.
  • 1 pound of beef, cubed
  • 4-5 Yukon gold potatoes, cubed
  • 5-7 carrots, sliced
  • 1 onion, red or white (your choice), chopped
  • 4-6 sprigs of fresh thyme, chopped
  • 4 tablespoons of salt
  • 2 tablespoons of pepper
  • 1 clove of garlic, minced
  • 4 cups of beef stock
  • 1/2 pint of Guinness
  • 2 tablespoons of browning sauce (Kitchen Bouquet)
  • 4 cups of water
  • 2 tablespoons olive oil
  • 1/2 cup flour
  • 1 tablespoon paprika

directions

Dredge beef in a mixture of flour, paprika and 1 tablespoon of salt. Heat olive oil in medium sized saucepan. When oil is hot, drop in the beef cubes and brown on all sides. Once beef has browned, deglaze the pan with 1 cup beef stock, 1/2 pint of Guinness and garlic. Simmer 5 minutes. Transfer beef mixture to slow cooker and add remaining ingredients. Cook on high for 30 minutes then turn cooker down to low for 3 hours.
