Nana Strouce's Jelly Cookies
ingredients
- 1 pound salted butter
- 4 cups sifted flour
- 1 egg yolk
- 1 cup sugar
- 1/2 teaspoon vanilla
- 1 jar seedless raspberry jam
directions
Preheat oven to 325 degrees F. Cream sugar and butter then add egg yolk. Add sifted flour to dough gradually. Knead thoroughly (can refrigerate dough at this point until ready to make cookies). Roll into small pieces of dough (size of a dime), press thumb in center to make indentation. Bake at 325 until light brown, about 10 minutes. Take out cookies and put small spoonful of jam in center hole. Put cookies back in the oven turn the oven off and leave in oven over night until jam is congealed. Sprinkle with powdered sugar.
