Slow cooker recipe

ingredients

  • 1 pound boneless, skinless chicken breasts
  • salt and pepper
  • 8 cloves garlic, minced
  • 1 cup wild rice blend OR brown rice (uncooked)
  • 1/4 cup lemon juice (fresh or bottled)
  • 2 1/4 cups water OR broth

directions

Season chicken with salt and pepper. Place chicken in the bottom of a slow cooker. Add garlic and rice. Add lemon juice to the water (or broth). Pour this mixture over the rice and chicken. Stir once to coat. Place lid on slow cooker and set on low for 8 hours. To plate, place a serving of rice on each plate and top with a chicken breast.
