  • 1 3/4 cup Flour
  • pinch of Salt
  • Filling
  • 1 1/2 lb Ground Veal
  • 1/2 lb Old Bra Cheese
  • 1 Ricotta Cheese
  • Approximately 1 dozen eggs
  • Salt
  • Pepper
  • Parsley

    Mix Dough in Food Processor

    Pulse beat all ingredients together

    Filling

    Mix all ingredients together

  • 6

    Texture should be soft and mushy

Use 3 lbs of meat for 8 batches of dough 7 dough and 1 1/2 lb of meat makes 16 dozen If egg mixture is no 3/4 cup add water
