Julie's Latkes
These chanukah latkes are the best! Makes a mess...but beats other recipes....especially the hashed browned substitutes!
ingredients
- 4 large potatoes peeled (i live yukon golds for best flavor)
- 1 medium onion
- 1 tbsn chopped fresh parsley
- 1 large egg
- 1 tspn salt
- 1/4 tspn white pepper
- 2 tbspns all purpous flour
- 1/2 tspn baking powder
- 1/2 cup vegetable oil for frying
directions
Grate potatoes and onion using grating disc of food processor. Transfer to colander;squueze mixture to press out excess liquid. In a large bowl, mix potatoes, parsley, egg, salt, pepper, flour and baking powder. Heat oil in deep heavy 10-12 inch skillet. For each pancake, drop about 2 tbsns of mixgture into pan. Flatten with a spoon so each pancake is 2.5 - 3 inches in diameter. Fry over medium heat about 4 minutes on each side or until golden crisp. Turn carefully so oil doesn’t splatter. Drain latkes on paper towels before serving. You can keep warm in warming drawer. Latkes are best if mixture is made and fried up fresh before serving! You can serve with applesauce and sour cream. Great as a side with meat, chicken, or bagels and lox!
