Cookie, Ice Cream Sandwiches
Put your favorite ice cream between two chocolate chip cookies to make a special dessert sandwich!
ingredients
- Step 1:
- 1 cup plus 2 tablespoons all-purpose flour
- 1/2 teaspoon baking soda
- Step 2:
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 1/2 cup light brown sugar
- Step 3:
- 1 large egg
- 1/4 teaspoon salt
- 1 1/2 teaspoon vanilla
- Step 4:
- Chocolate Chips
- Step 5:
- Ice Cream, your choice in flavor

Step 1: Preheat the oven to 375 degrees. Grease or line 2 cookie sheets. Whisk together flour and baking soda.

Step 2: Beat butter, sugar and brown sugar in a separate large bowl until well blended.

Step 3: Add egg, salt and vanilla and beat until combined.

Step 4: Stir the wet ingredients into the dry ingredient mixture until well blended and smooth. Then stir in chocolate chips.

Step 5: Drop the dough by heaping teaspoonfuls about 2 inches apart onto the cookie sheets. Bake, 1 sheet at a time, until the cookies are just slightly colored on top and the edges are brown, 8 to 10 minutes. Let stand briefly, then remove to a rack to cool.

Step 6: Once cooled, place one scoop between two cookies to make a sandwich.
