Eggplant Parmigiana
ingredients
- 1-2 eggplant dependent on size
- 1 beaten egg
- 1/4 cup all purpose flour
- 1 cup or more breadcrumbs
- 1/2 cup Parmesan cheese
- spaghetti sauce
- 1 cup shredded mozzarella cheese
- 16oz ricotta cheese
directions

Peel eggplant and cut into 1 inch diameters. Dip eggplant into flour then egg then breadcrumbs. In large skillet cook eggplant in hot oil 4-6 minutes or till golden turning once. Drain on paper towels

In lasagna dish place sauce, then fried eggplant. Layer cheese mixture. then eggplant then sauce.

Top with mozzarella

Bake 400degrees for 10-12 minutes or until hot.
