ingredients

  • 1 10 oz. package Italian-blend salad greens
  • 2 cups grilled chicken breast strips (such as Louis Rich, about 6 oz.)
  • 1 cup blueberries
  • 1 cup strawberries, quartered
  • 1 cup banana, sliced
  • 1 cup kiwi fruit, peeled and sliced
  • 2 Tbs. pine nuts, roasted
  • 2 Tbs. herbed goat cheese
  • Raspberry Dressing
  • Raspberry Dressing:
  • 1/3 cup honey
  • 1/4 cup raspberry or red wine vinegar
  • 1/4 cup plain fat-free yogurt
  • 1 Tbs Dijon
  • 2 tsp. Olive Oil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

    Arrange 1 1/2 cups salad greens on 4 plates.

  • 2

    Divide the remaining ingredients, except the Raspberry Dressing, equally among the 4 plates.

    Drizzle each serving with 3 Tbs. of the Raspberry Dressing.
