CHICKEN-FRUIT SALAD
Easy and delicious. 7 Weight Watcher points per serving, if you are counting.
ingredients
- 1 10 oz. package Italian-blend salad greens
- 2 cups grilled chicken breast strips (such as Louis Rich, about 6 oz.)
- 1 cup blueberries
- 1 cup strawberries, quartered
- 1 cup banana, sliced
- 1 cup kiwi fruit, peeled and sliced
- 2 Tbs. pine nuts, roasted
- 2 Tbs. herbed goat cheese
- Raspberry Dressing
- Raspberry Dressing:
- 1/3 cup honey
- 1/4 cup raspberry or red wine vinegar
- 1/4 cup plain fat-free yogurt
- 1 Tbs Dijon
- 2 tsp. Olive Oil
- 1/4 tsp. salt
- 1/4 tsp. pepper

Arrange 1 1/2 cups salad greens on 4 plates.

Divide the remaining ingredients, except the Raspberry Dressing, equally among the 4 plates.

Drizzle each serving with 3 Tbs. of the Raspberry Dressing.

Combine all the ingredients; stir with a whisk.
