Faye's Honey Cake
Honey cake - great for Rosh Hashanah!
ingredients
- 3 C. sifted all-purpose flour
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/8 tsp. ground cloves
- 1/2 tsp. nutmeg
- 1 tsp. baking soda
- 2 C. honey
- 1 1/2 C. orange juice
- 1/2 C. shelled pistachio nuts
- 1/2 C. shelled walnuts
- 1/2 C. raisins
- 1/2 C. dried apricots cut into bite-sized pieces
- 1/4 slivered almonds

Preheat oven to 350 degrees

In a large bowl mix dry ingredients. In another bowl mix honey, O.J. and nuts (except almonds) and dried fruits.

Fold the wet mixture into the dry. Mix well with a wooden spoon.

Grease 2 9x5" loaf pans.

Divide the batter between the 2 pans.

Sprinkle almonds on top.

Reduce heat to 325 degrees and bake approximately 45 minutes, or until a toothpick inserted into the cake comes out dry.
