Lauren's Concord Cake

- 6 egg whites
- 1/2 tsp cream of tartar
- 1 cup sugar
- 1 cup powdered sugar
- 1/2 tsp vanilla
- 1/4 cup of cocoa powder
- Mousse
- 9 Oz semi-sweet chocolate
- 2 cups of rich whip
- 2 tsp instant coffee
- 2 tsp hot water

1)Preheat oven to 200 F

2) Beat eggs and tartar, add sugar, a tablespoon at a time while beating

3) Add vanilla, sift powdered sugar and cocoa powder and salt.

4) Fold into egg whites and pipe into spiral layers, then Bake about 1 1/2 hrs

6) Put chocolate in a bowl. Take a saucepan and combine 3/4 cup of cream, with coffee and water until almost a boil. Take pan off stove and pour over chocolate. Leave for 1 minute. When melted, stir. Allow to cool. Add rest of creme that has been whipped and fold into chocolate.
