Oven Roasted Winter Vegetables
ingredients
- 6 Tbsp olive oil
- 2 1/2 lbs rutabagas (1 inch cubes)
- 2 lbs onion (1 inch cubes)
- 1 lb carrots (2 inches long)
- 1 lb sweet potatoes (1 inch cubes)
- 30 garlic cloves
- 14 fresh sage leaves
- 7 sprigs of fresh rosemary
- salt and pepper

Preheat oven to 450°.

Preheat 2 large roasting pans for 15 minutes.

Add 1 Tbsp olive oil to each pan. Add 1/2 of the veges and herbs to each pan.

Drizzle 2 Tbsp olive oil over veges in each pan. Season with salt and pepper.

Roast until tender when pierced with a fork, stirring occasionally. (~1 1/4 hours)

This goes very well with any roast. We tend to eat it every other year on Christmas with our pork tenderloin. I substitute potatoes for the rutabaga, since I don't like rutabaga (I don't think!)
